(basically changes the flash in this case to remove nothing from health on hit)

root hacking is in-memory variable modification.
bytecode alteration means you actually modify the code flash will run.(allows for a lot more possibilities, it's basically some simple reverse engineering &modification of the code)

@skuff: those videos show root variable modification, ie once the game is loaded, you search for actual variable values in memory and modify them/freeze them.
The difference with bytecode modification is that bytecode modification will modify the game rather than the variables(which is usually much more pain, hence if you can use normal root variable modification, you can usually go for it:)).
