I play Nethack/Slashem with the GUI.  It can be ran in ASCII mode though, and I think you can play it via Telnet or something.

I played ElephantMUD for about 15 minutes WAY back in the day.

This is the best Text-Based game I've ever played, but it's the only one I even got into because I was a supposed "beta-tester" lol.

Well the one im playing is called Ruins Of Chaos...

Basically, the idea is to get the best stats.... pretty much, anyone with 10-20 guys playing under him as his officer, can beat the game. I would like to try to do that once... you know, assemble a team of players to try and wipe the floor with everyone. If you can do well for the first week, youve got the game pretty much won. But i dont think there is anyone that i know that would want to do that lol it requires time and a fast numpad hand...
